The birthplace of rava idli is the southern Indian state of Karnataka. It is created by MTR Foods, a famous food company in India. Rava idli originated out of necessity during the Second World War when there was a shortage of rice. Since then, rava idli has become a popular breakfast choice not only in Karnataka but also across India and some parts of the world.
Instant Rava Idli can be made very easily at home. The main ingredients of this delicious idli are – rava, curd, baking soda or eno, mustard, curry leaves, grated carrot, cashew nuts, coriander leaves and a pinch of ginger for flavour.
Rava idli is served hot with chutneys like coconut chutney, mint chutney and tomato chutney. For even more flavor, it can be enjoyed with sambar, kurma or sago. Rava idli is a delightful twist on traditional South Indian cuisine.
First, heat the pan. Once the pan is hot, add the semolina and fry until it turns brown and remove.
Then add 2 tablespoons of oil to the same pan. Once the oil is hot, add mustard seeds, chickpeas, urad dal, curry leaves and fry them. Add the chillies and ginger.
Add the grated carrot.
Now add the roasted semolina to this and mix well. Turn off the stove and let it cool.
After cooling, add a cup of yogurt to this mixture.
In the same cup in which you added the yogurt, add one cup of water and mix well. Add the coriander leaves and mix well.
Now add salt and mix well. Soak for 15 minutes.
Meanwhile, prepare the idli plate. Grease it like this. I have used coconut oil here. Then spread the cashew nuts like this. You can use just grated or chopped carrots here.
Similarly, keep the idli steamer ready. Fill the idli steamer with water, cover it and heat it.
After 15 minutes, add baking soda to the rava mixture that was set aside and mix well.
Then pour this mixture into the idli plate.
Place this plate in the steamer.
After placing all the plates, cover and cook on medium heat for 10 to 12 minutes.
Now the very soft and quick rava idli is ready to be enjoyed.
Serve this idli with chutney, sambar or sago.
