🥘 Ingredients (Serves 2–3)

  • 1 cup Basmati rice (soaked 30 minutes)
  • 200 g Mushrooms (sliced)
  • 2 tbsp Oil or Ghee
  • 1 medium Onion (sliced)
  • 1 medium Tomato (chopped)
  • 2–3 Green chilies (slit)
  • 1 inch Ginger
  • 3 cloves garlic
  • 1 small Carrot (optional, diced)
  • ½ cup Green peas (optional)
  • 1 Bay leaf
  • 1-inch Cinnamon stick
  • 2–3 Cloves
  • 1 Cardamom pod
  • 1/2 cup – Curd
  • 1 tsp Cumin seeds
  • ½ tsp Turmeric powder
  • 1 tsp Red chili powder
  • 1 tsp Garam masala
  • Salt to taste
  • 2 cups Water
  • Fresh Coriander leaves (for garnish)


👩‍🍳 Step-by-Step Cooking Method

  1. Prepare Rice: Wash until water runs clear, soak for 30 minutes, then drain.

2. Grind spices :  In a mixer jar take 1/2 bunch coriander, 1/2 bunch mint, 3 chilli, 1 inch ginger , 3 cloves,  garlic, 4 pods cardamom ,1/2 tbsp pepper and grind it to smooth paste by adding curd. Keep aside.

Heat Oil/Ghee: Warm in a cooker or heavy-bottomed pan.

  1. Add Whole Spices: Add bay leaf, cinnamon, cloves, cardamom, and cumin. Let them crackle.

  1. Saute Onions: Cook onions until golden brown.

  1. Add Tomatoes & Spices: Mix in tomatoes, turmeric, chili powder, and garam masala. Cook until soft.
  2. Add Vegetables & Mushrooms: Stir in mushrooms, carrots, and peas. Cook for 2–3 minutes.

  1. Add Rice & Water: Mix gently, add water and salt, stir lightly.

  1. Cook: Cover and cook (2 whistles in a pressure cooker or 15–18 minutes on low flame).

  1. Rest & Fluff: Let it rest 5 minutes, fluff gently, and garnish with coriander.
