Karela can be easily grown at home. When buying karela from the market, it is better to buy fresh karela. There are several methods that can be used to reduce its bitterness. The method that I usually use is to wash and chop the bitter gourd and mix it with salt for some time. Through this article, you will see the step-by-step recipe of Karela Ki Sabji. Okay, so let’s learn how to make Karela Ki Sabji:

Ingredients:
  • 3 Fresh bitter gourd
  • 1 tbsp Coriander seed
  • 1/2 tbsp Cumin
  • 1/4 tbsp Fenugreek
  • 1 tbsp urad dal
  • 1 tbsp Mustard
  • 4 Black pepper (long pepper/Red Chilly)
  • 4 Bell pepper(short red chilly)
  • 1/2 cup Grated Coconut
  • 1/4 tbsp Turmeric powder
  • According to the sweet jaggery
  • To taste Salt
  • A little Curry leaves
  • 4 tbsp Coconut oil

Step by step methods with photos:

  1. First, heat some oil in a pan.

2. Add long pepper, short pepper, coriander, cumin, fenugreek and urad dal to the hot oil and fry them one by one.

3. Put the fried mixture in a mixer jar.

Add grated coconut, tamarind and water and grind it finely.

Set the ground mixture aside.

4. Now wash the bitter gourd well and remove the roughness on it with a knife.

5. Then cut it lengthwise and remove the seeds inside it.Then chop it into small pieces.

6. Mix the chopped bitter gourd with salt for 30 minutes.

 

7. Then wash it well in water and drain or squeeze the water well and keep it in a container.

 

8. Now put a pan in the oven and once the pan is hot, add oil.

9. Once the oil is hot, add mustard seeds and sprinkle it and add curry leaves.

10. Now put the bitter gourd in the pan (be careful while adding it)

11. Now mix the bitter gourd/karela well and fry for a while.

12. Now add enough salt to it and add turmeric powder and cover the pan and cook on medium flame without adding any water for 5 minutes.

 

13. Now mix the bitter gourd well. The bitter gourd has released water well. There is no need to add more water. Cook in the same water. Also add enough jaggery and cover and cook foranother 10 minutes.

 

14. Now mix well. Check the taste of salt and jaggery. Add if required and mix well and cover and cook for another 5 minutes.

 

15. Now mix the karela well.Now add the ground mixture to the karela.Wash the mixie jar and add its water and mix well.

 

16. Now close the lid and cook on medium flame for 5 minutes.

 

Now mix well and Karela Ki Sabji is ready.
